Getting to Know Tea

What is tea?
Black tea, green tea, white tea and blue tea (aka oolong tea) are the general terms used for types of tea, even though all originate from the Camellia sinensis plant.
 
But that’s just the start like wine tea is divided further into regional varieties and manufacturing styles, so you find Darjeeling black tea, in the foot hills of the Himalayas, or Mao Feng green tea, a tea where the bud and leaf are kept intact when dried to intensify the flavour.

Where does tea come from?
Tea comes from the Camellia sinensis bush and it usually grows between the tropics of Cancer and the tropic of Capricorn, predominantly in warm wet climates. The big players in the world of tea growing are India, China, Sri Lanka and Kenya. Perhaps the smallest grower is, England, there’s now some being grown in Cornwall.
 
Good tea vs Bad tea?
A good tea is a well-made tea - one that has been looked after and finely crafted. Generally tea estates have to choose between lots of tea or finest teas. If they choose to go for the finest tea they will only pick the best leaves (the freshest shoots from the top of the bush) and process them very delicately ensuring they don’t damage the leaf.
